This is a great recipe that is part of our Christmas morning tradition. It’s also great to make ahead for those busy week day mornings. We have used this recipe for so long, I don’t remember where it originated.
Egg Casserole
1 Roll of sausage (12-16 oz.) cooked, crumbled and drained
1 Doz. eggs
8 0z. Sour Cream
1 Small can of diced chilies (add more if you like)
1 1/2 – 2 C shredded Cheese (we use sharp cheddar)
Beat eggs. Stir in sour cream, cheese and chilies. Lightly grease 13×9 pan.
Spread cooked sausage in pan, followed by egg mixture. Bake in preheated 350 oven for 35 to 40 minutes.
